Almost like, Zoila’s Super Awesome Chewy GF Chocolate Chip Cookies  but a little different… but the ridiculous naming stays. :)

Coconut Milk Icing

Coconut Milk Icing

You won’t believe this taste. You can pretty much change the color and flavor just as easily as you would regular icing. But the great part about this one, is that it is soy free and casein free. I found this recipe at vegweb.com.

Coconut Milk Icing:

Cream  the shortening and about 3 c. or powdered sugar.  Add extract and coconut milk and beat another 5-8 minutes.  You may have to add more powder sugar if it comes out too liquid. Add a few table spoons at a time, until it becomes thick and fluff. Chill for 20- 30 minutes to have a dense fluffy frosting. Best used on completely cooled cakes or cupcakes.

I have noticed that my son Gabe has had an aversion to egg for sometime, but as he gets older it has gotten worse.  He had a very slight levels of egg IGG. While it isn’t high enough for a reaction, does make me wonder about his aversion and weather or not I should have it in my baked goods.

I came across this today  egglesscooking.com. I had heard of using flax seed as a substitute, but I wasn’t actually sure. So of course I had to try it out, and boy was I impressed.  I am sure it is well known in the vegan and egg allergy world. But it was a great surprise you me. You can use flax seed, pretty much anywhere you would use eggs. Granted I haven’t made a flax see omelet or quiche or flan yet. I think I just might try for the hell of it.

It suggest that you buy flax seed and grind them yourself.  I have noticed that flax meal works just as great.

Flax Meal Egg Substitute:

The 1:3 ration is equivalent to one egg per recipe

GF Cake & Pie Crust Flour Blend

This flour blend works great for cakes & pie crust.  It is GF, soy free, casin free, and corn free. So, it will work great even if you have more sensitive digestion, then just gluten. Both coconut & almond flour are rather sweet flours and work great for deserts. It will yield 9 cups. You can reduce or increase, so long as it has a 3:2:1 ratio.

All Purpose GF Frying Flour mix.

I noticed when I went to purchase tempora, it had wheat as an ingredient.. If you are not familiar with tempora, it is the four blend that is used in oriental cooking. Traditionally it was made with rice flour.  So, obviously I had to put it back on the shelf. So here is my recipe, that you can use on pretty much anything, seasoning or no seasoning.

I absolutely love this recipe. The title doesn’t exactly sound too appetizing, but  it really is.  It’s egg free, casein free, soy free and gluten free. It’s loaded with fiber, protein, and omega-3. You can change the flavor with just one step. Your kids wont know that they are actually eating something healthy and you wont feel so guilty letting them eat a piece of cake or two.

Budding Polar Bear members.

What would any homeschooler do if you lived by the beach, and it has been 50 degrees and all of sudden it was 80degress for the day? The beach of course!  Well, I got to admit, we were the only ones out there besides a couple of men fishing. It was pretty pleasant. The boys swimming and chasing Winston.  Ok, about that swimming. I told them it was way too cold for it. They of course got ahead of me while I was walking the dog. Before I could yell don’tgointothatwater!! They had stripped themselves down and jumped in.

I think I have budding polar bear members, wouldn’t you agree.  Lucky enough we did have towels on us. But believe it or not, we were there for two hours before they were ready to go.  Honestly, I am glad we went, I think that was the last hoorrah before winter really sets in.

It is so nice to have freedom with my kids. To hell with it all.. you should be running your life, not your life running you. In this case running from a dog,in your undies, in the middle of November.

The boys were at their Nana’s, Ian was at work, room mate was asleep, and the dogs were chilling at my feet. I haven’t had the house to myself in a long time. I was enjoying all my mind numbing trivial house work. One more chore for the day…..dishes. Normally I loathe doing dishes. Actually I could careless for any house work, but that is neither here nor there, it has to get done. But today I was enjoying my mindless dish washing time and the stillness of my house. When I reached for the last dish in the sink.. a blue and white damask print cup. Stuck my rag in to clean it vigorously, after all I was excited that it was the last, and pulled my hand of the hot soapy water to realized I sliced my pinky wide open.  Cursed a bit, and immediately ran it under cold water.  I thought it was little nick.. it wasn’t. It was probably a forth the was through.   Needless to say the cup was chipped, and I was defeated.

Getting the stitches were fine, but O.M.G! The novocaine shot hurt like you wouldn’t believe.  I actually was wishing I was in labor, because they would have given me some pain medicine to go home with.  I swear my pinky has the stitches, but it is making my elbow ache like crazy. And what is worse, is that I got it right at the base of my finger.  Every time I move my pinky, I split it open again. So, I taped my fingers together, and I am feeling a bit like the penguin from batman. So here is a pic of my evil stitches from the war of cups.

First time ever!

First time ever!

We have had some really rough spots with the boys. Honestly, it wasn’t too long ago that I was whining about this very issue. The past year and half we have been overwhelmed with  one appointment after another. From OT, ST,PT, and visual therapy, psychiatrist, counseling, chiropractors, ER, and just plain sick days. I  often joke that I may not be a soccer mom by any measure, but I sure am an appointment mom.

Between all of our therapy, vitamin supplements, sensory home diet, homeschooling, and diet changes, I am very proud to say that we are finally able to reduce their medicine. Gabe is taking half the Concerta, no Ritalin, and 1/2 the Resperdol for two weeks now.  I never thought I would see this day. I am so ecstatic for him, I don’t even know how to express myself.   He isn’t drooling, he isn’t fidgeting his his seat, his hand writing is getting neater, he is WANTING to read, and he is wetting the bed less.   I didn’t think I would see this much improvements from vitamins & chiropractor. I thought, meh I might see change.  I never thought it would be this soon.

Zeke is just blossoming. He has been conversing more, let me remind you, 2 years ago he lost his speach and eye contact.  He  has been making friends, and actually wanting his friends to come over.  He has stopped his tip-toe walking, walking in circles,  eating more, wetting the bed less, hugging, kissing and holding my hand.  He is so affectionate. The first few times, I was sort of tearful. Nothing makes you feel more rejected then your child reusing to touch you.

We haven’t reduced his medicine just yet. But I think it will be soon. In fact, two years ago when they tested Zeke, they thought he was classically autistic, but because he was very specific with his activities, and when he did speak, it was very specific subjects, they thought Aspergers would be a better diagnoses for him. His test this time, revealed that he displayed no symptoms other then  OCD, ADHD, and anxiety issues. He was able to hold eye contact and carrying on a conversations, and he didn’t with draw from touching.  They still say his has ASD, but is now considered  high functioning like Gabe & their father.

Next big thing I need to tackle this year is personal hygiene.  Getting them to take a bath more then once a month would be a miracle.
